The results show that the higher the vacuum degree, the better , the faster the moisture in the material evaporates and dries, the lower the temperature rise of the material. With the increase of microwave power, the drying time is greatly shortened. Comprehensively consider the drying time, temperature, shape change and color of dried roses, and compare with hot air drying. The microwave vacuum drying process with a vacuum degree of 0.10 MPa, a microwave power of 200 W, and a drying time of 80 min was selected as a more suitable drying condition. The test results provide a certain rationale for the drying and industrial production of roses.
